It is used as color-keeper and antiseptic of juice. It is also used as emulsion stabilizer of egg yolk. DL-Malic acid also can be used as pharmaceutical intermediate, cosmetic, rinse, metal cleaner, buffering agent, retarder in textile industry, fluorescent whitening.
